Ingredients

1 red bell pepper seeded and chopped
2 fresh medium jalapeno peppers seeded and chopped
3 green onions sliced
2 tsp olive oil
1 jar 14 oz of artichoke hearts drained and chopped
2 cans 6 oz of lump crab meat drained and checked thoroughly
1 cup low fat or regular mayonnaise
1/2 cup freshly grated parmesan cheese
1/2 cup cashews

Instructions

In a sauce pan add olive oil and saute red peppers, onions and jalapenos until soft. Mix crab and mayo together in a bowl add grated cheese and season as needed. Add pepper mixture to crab and mix well place in a greased 1-quart casserole pan and bake for 25 minutes at 375 degrees.

Serve with tortilla chips or crackers
